Molasses Oatmeal Bread (for bread machine)
The Lighthouse Bed and Breakfast
McGregor, Texas


1 package (1/4 oz) active dry yeast
1 cup quick-cooking oats
3 cups bread flour
1 teaspoon salt
1/2 cup molasses
1 tablspoon vegetable oil
1-1/4 cups plus 1 tablespoon warm water

In bread machine pan, place ingredients in order given. Select "white bread" setting. Bake according to bread machine directions.
Yield: 1 loaf (1-1/2 lbs)


Sunday Morning Cinnamon Rolls
The Lighthouse Bed and Breakfast
McGregor, Texas


3 c flour
3-1/2 t baking powder
1/4 t salt
1/2 c sugar
2/3 c milk
2 beaten eggs
1/2 c melted margarine

Sift flour, baking powder, salt and sugar. Mix milk, eggs, cooled margarine; add to dry ingredients.
Roll 1/2 inch thick rectangle.

1/2 c sugar
2 T cinnamon
1/4 c melted margarine

Spread melted margarine over dough. Sprinkle with sugar and cinnamon. Roll as for jelly roll; seal edge; cut 3/4 inch slices. Place slices in a greased 9 x 13 baking dish. Bake in moderate oven (375 degrees) 25-30 minutes. Ice with powdered sugar icing.

Powdered Sugar Icing
1-1/2 c powdered sugar--sift
1 t vanilla
milk--enough so that icing can be dribbled over hot rolls


Mixed Breakfast Fruit

1 cup green grapes
2 bananas
1 pint strawberries
1 can mandarin oranges
1 can chunk pineapple
1 can sliced pears or peaches
1 container peach glaze

Drain canned fruits. Prepare fresh fruit. Mix fruits together. Gently fold in peach glaze. Spoon into fruit dishes. Chill until ready to serve.


Peach Salad

2     .3 oz packages sugar free peach gelatin
1    4.6 oz cook & serve pudding & pie filling
3    cups boiling water
1    29 oz. can sliced peaches

Dissolve the pudding and gelatin in the boiling water. Cut the peaches into small pieces and add them along with the peach juice to the pudding mixture. Refrigerate until firm. Stir again, just before serving. Top with unsweetened whipped cream and chopped pecans. 


Breakfast Peaches

2     29 oz. cans peach halves
1/2  cup brown sugar (plus 1 tsp for each peach half--see below)
1/2  cup chopped pecans
1/2  cup quick oatmeal
1/2  cup granola
1/2  cup melted butter
1     cup vanilla yogurt (see below)

Preheat broiler to 500 degrees. Combine 1/2 cup brown sugar, pecans, oatmeal, granola and melted butter. Mix well, set aside. Arrange a layer of peaches (rounded side down) in shallow baking dish. Place 1 tsp of brown sugar in center of each peach half. Broil 5 minutes or until brown sugar is melted. Remove from broiler and place a heaping spoonful of topping in center of each peach half. Place under broiler again, for about 1 minute. Be careful not to burn! Remove from broiler and top each peach half with a tablespoon of yogurt. Serve warm. Makes 10-12 servings.
